Zucchini

Zucchini is available all year round and is best in summer, especially when picked fresh from the garden. A delicious source of potassium, vitamin C, vitamin A, folate and fiber, it packs a nutritious punch for just 19 calories per cup. Simply seasoned with olive oil, garlic, salt, and pepper, zucchini is delicious on the grill, says Rachael Hartley, RD, in Columbia, South Carolina. “I like to make extra and use leftovers during the week for pasta, salads and sandwiches.”
